Tofu Scramble with Mushrooms and Spinach

2 tablespoons olice oil
2 tomatoes, chopped
2 cloves garlic, crushed
3/4 cup sliced mushrooms
400g firm tofu, crumbled
1 bunch spinach
1/2 teaspoon soy sauce
1 teaspoon lemon juice

In a frying pan heat the olive oil.
Over medium heat add the tomatoes, garlic and mushrooms.
Cook for 2-3 minutes.
Rinse the spinach and add to the frying pan, along with the crumbled tofu, soy sauce and lemon juice.
Cover and cook for 5-7 minutes stirring occasionally.
Season with salt and cracked pepper before serving.
