Perfect Vegan Brownies

1/2 cup canola oil
1/2 cup maple syrup
1/4 cup soy milk
1.5 teaspoons vanilla
1/2 cup white flour
1/2 cup wholewheat pastry flour
1/2 cup cocoa powder
1/2 cup sugar (1/4 white and 1/4 brown sugar works well too)
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup dark chocolate chips
1/2 cup walnuts (optional, of course)

Preheat oven to 180C.
Lightly oil an 20cm square GLASS pan.
Whisk the milk, vanilla, maple syrup and oil together in a small bowl.
In a separate bowl combine the flours, cocoa powder, sugar, baking powder and salt.
Fold the dry ingredients into the wet mixture. Don't over mix.
Fold in the chocolate chips and walnuts, if using.
Put the batter in the pan and spread out evenly.
Bake for 35 minutes.
Do not over bake.
Let cool in the pan before cutting
