Three Bean, Tomato and Spinach Stew

1 large onion, finely chopped
1-2 cloves garlic, crushed
Olive Oil
400g can of chopped tomatoes
1 tablespoon ground cumin
100g green beans, chopped
1 can kidney beans, drained and rinsed.
1 can cannellini beans, drained and rinsed.
100g spinach, washed and chopped.
1 cup water

Cook onion and garlic in a little olive oil until softened.
Add cumin and cook for a minute.
Add the chopped tomatoes, green beans and water.
Leave to simmer for 10 minutes, until thickened.
Add the canned beans and cook for 5 minutes.
Add the chopped spinach and cook for a further 5 minutes.
